The new Sydney Fish Market will transform the foreshore of Blackwattle Bay with a new iconic building that will soon be home to some top names in the hospitality world as the new space fills with new speciality food retailers and restaurants.
The iconic new waterfront venue has already attracted top Sydney food operators such as Malaysian favourite Ho Jiak, plus Luke Nguyen, who is opening a flagship Southeast Asian restaurant with Doltone hospitality group, while local Enmore gelato favourite Cow & the Moon is also opening its doors.
The new space has been a huge drawcard with almost all retail spaces filled. They’ll be joining existing operators such as Claudio’s Seafood, Getfish, and Christies Seafood who will relocate to the new building once construction is finished.
A major construction milestone has been achieved, with the first 40 of 406 signature fish scale roof cassettes installed. These unique features will create the impression of a gentle wave-like canopy whilst also generating electricity for the markets.
The construction of the new Sydney Fish Market has also provided a massive boost to NSW-based business with $600 million in contracts awarded to local suppliers. This includes more than 500 marine piles from SMC Marine in Balmain, and more than 30,000 cubic metres of concrete from Traino in Pyrmont and 6000 tonnes of reinforcement from Active Steel in Western Sydney.
With construction of the new Sydney Fish Market moving into the home stretch, the sustainable and spectacular design will be a new ‘must visit’ destination for Sydneysiders and visitors, with more than six million people expected annually.
Complementing the new building with quality retailers has bolstered the appeal of new Sydney Fish Market. Placemaking NSW has carefully selected food and beverage retailers to cater to a variety of customers, making sure there are different price points so you can grab take-away fish and chips or plan a fine dining at a deluxe five-star meal overlooking the harbour.
The new Sydney Fish Market is key to the transformation of Blackwattle Bay, delivering a waterfront promenade, more than 6000sqm of public space, 12,000sqm of retail space and improved pedestrian and cycling links.

“It will truly be the next iconic destination on Sydney Harbour, soon to be connected by 15 kilometres of non-stop boardwalk from Woolloomooloo all the way to Rozelle Bay.
“As we fly past two major milestones, the site continues to be a hive of activity with the basement, lower and upper ground spaces completed, retail spaces being formed, and the magnificent wave-like roof taking shape.”
New retailers
Luke Nguyen for Doltone Hospitality Group
Doltone Hospitality Group are partnering with Luke Nguyen again to create a flagship South East Asian Restaurant. Luke is a celebrity chef with an enormous following both in Australia and internationally. Author, chef, restauranteur and TV presenter, Luke’s restaurant will be a wonderful addition to the new Sydney Fish Market.
Bayside Boys (Trippas White Catering)
Bayside Boys is an entirely new concept by the team at Trippas White, who are one of Australia's largest hospitality groups, with 35 venues in their portfolio. Bayside Boys will be a casual eatery, where lobster, burgers and craft beers will dominate the menu. It is inspired by Southern USA and the East Coast of Australia, featuring 'Po' boys' which is a style of hot sandwich from Louisiana. Dirty Red An Inner West institution, the team at Dirty Red will take things up a notch with an extensive bar and cocktail menu and a variety of shared plates, focussing on the best local produce and taking full advantage of those beautiful sunsets over Blackwattle Bay.
The Japanese Collective
The Japanese Collective will feature Ramen, Donburi, Seafood BBQ and a Sake Bar. It is backed by Hidetoshi Tsuboi, Libras Ting and Takeo Muramoto, who between them are responsible for delivering some of the most awarded Japanese concepts in Sydney and Japan including Hakatamon Ramen, Tsukiyo Street Food and Sekka Dining in Sydney and Kamameshi Ichie and Patisserie Ichi in Hokkaido, Japan.
Top Juice
Top Juice works with Australian farmers and suppliers to source the freshest fruit and vegetables to create healthy and convenient juices and salads. With over 55 stores across the Eastern Seaboard, the team at Top Juice is excited to join the Sydney Fish Market family with their 56th store.
Stitch Coffee
Considered by many coffee aficionados as the best roasters in Sydney, Stitch Coffee has a passionate and creative team, sourcing coffee from around the world, connecting customers with coffee producers.
Nawar Adra, owner and founder of Stitch had humble beginnings working as a barista before starting his own roasting journey where he realised that artistry of coffee starts with blending origins and creating the complexity structure and balance we see today in every blend by Stitch.
Pared with their range of coffees with be a number of Stitch signature bowls, toasties, pastries and baked goods.
Banh Mi & Phin
Banh Mi & Phin will offer Vietnamese street food with a focus on fresh salads, rice paper rolls and the best Banh Mi. Hailey Nghiem and Charlie Dinh both have an impressive pedigree, having worked at some of Sydney’s top establishments and are setting up their first venture with the Sydney Fish Market.
Nanjing Dumplings
Nanjing Dumplings menu will feature both traditional and specialty dumplings and one of the only places in Sydney to experience Nanjing-style xiao long bao, a doughier and slightly sweeter version of Shanghai’s most famous soup dumplings.
Cow & The Moon
First opened in Enmore in 2010, this family run, artisan gelateria was voted world’s best gelato in the Gelato World Tour in Italy in 2014. A true dessert bar with a range of ice cream cakes, great coffee, and the best gelato.
Ho Jiak
