Waldorf Astoria Sydney has announced chef Curtis Stone will launch his first Australian restaurant at Australia’s first Waldorf Astoria.

The celebrity chef will lead the culinary vision for Waldorf Astoria Sydney, shaping two original dining experiences for the hotel.

Stone said: “Coming to Australia to create something of this scale is incredibly meaningful for me. These dining experiences are deeply personal projects, inspired by the producers, seasons, and hospitality culture I grew up with.

“To partner with Waldorf Astoria Sydney and bring these ideas to life overlooking one of the world’s most spectacular harbours is both an honour and a milestone in my career.”

Waldorf Astoria Sydney General Manager Marlene Poynder said: “Waldorf Astoria Sydney represents a defining moment as we introduce the brand to Australia.

“To work with a chef of Curtis’ calibre makes this especially meaningful. Together, we're creating a destination where exceptional hospitality, world-class dining, and perhaps one of the world's most remarkable harbourfront settings come together to deliver an unforgettable guest experience.”

The 100-seat restaurant will be located on level 24 of the hotel, together with a separate rooftop bar on level 25. Both venues will feature views of the Sydney Harbour Bridge and the Sydney Opera House.

The celebrity chef told the Sydney Morning Herald the restaurant menu will focus on Australian ingredients.

“We’ve got some of the best seafood in the world, beautiful fruit and vegetables, probably the best meat in the world, and stuff no one else has in our native ingredients,” he said.

“I want people who live in Sydney to think of us when they have someone in town. I get goosebumps every time I walk up here.”
